Well it’s about time that I get to share these Cinnamon Roll Cookies!
I’ve been wanting to post these for quite sometime, but you know, those pumpkin recipes keep getting in the way. Don’t worry, we’ll get back to those soon. Trust me, I have lots of pictures to edit!
These Cinnamon Roll Cookies took weeks to figure out. First, they fell apart too easily. Then they were too flat. Then they were too puffy. Then they were perfect but the frosting was too sweet. Then I made a cream cheese frosting and it was too gooey.
Then, finally, I had the perfect cookie and the perfect vanilla glaze.
These cookies are a great fix for a warm, gooey cinnamon roll craving. I haven’t quite mastered bread, and the thought of even trying to figure out a gluten free cinnamon roll overwhelms me…and that is an understatement.
So, these cookies are a compromise to my sanity. The dough is actually shapeable and the flavors are identical to those homemade cinnamon rolls that always seem to be cooking in the oven during the holidays. Plus, who would pass up a cookie?!
