ME BEFORE THE RECIPE…
Ben and I finally went on a date night. It’s been a long time. Way too long. Long enough that I pretty much forgot what it was like to go on a date.
It’s not that we’re anti date night or hesitate leaving the kids. I’ll leave the kids any day with a babysitter. It’s just that we’ve been so dang busy the last few months that every weekend ended up being a packed whirlwind of activities. Not to mention, Ben and I have basically been playing “out of town pinball” with each other for a good portion of February and March.
But alas, date night was resurrected last night and it was glorious! We did all the things we wanted to do without kids.
We ate sushi with no complaining, crying, gagging, dry heaving, or any of those other grotesque sound effects children like to offer up in the sight of raw fish. Actually, Emry isn’t too bad with sushi, but Braelyn…you would think we were trying to get her to eat a heaping plateful of slimy worms whenever we put sushi on her plate. D-R-A-M-A!
What happened after sushi was magical. So magical, it was easily the most memorable moment of the night: grocery shopping. Yep, you read that right. We went grocery shopping with NO KIDS in tow as part of our epic date night.
Now, it’s not like we planned grocery shopping as part of our date or anything. I mean, how lame would that be??? But, we had a little over an hour to kill after dinner and before our movie. I hadn’t shopped for Easter goodies yet. Plus, Ben’s parents were arriving in town the next morning, and I was in need of some food items. So, grocery shopping it was. And I’ll tell you, I’ve never been in and out of a store so quickly, not forgetting a single thing on my list.
Also, I discovered that Ben is a pretty fabulous shopping assistant. He reaches all the items on the high shelves, manhandles multiple gallons of water and milk, and stands in the check out line while I zigzag back and forth between aisles, grabbing all the last minute items I almost forgot. Oh, and he loads the groceries in and out of the car AND puts the cart back where it belongs. Yep, everybody should grocery shop with a hottie husband.
Ben seriously was a trooper all night. He let me order the sushi I wanted, he grocery shopped with a smile on his face (I know he secretly hated every minute of it), and he even let me select the movie without any moans or groans.
Usually we would see some kind of action movie with a sprinkling of romance. But this time around, I insisted he take me to see I Can Only Imagine. Absolutely no words. I loved every minute of the movie. It was clean, wholesome, entertaining, and offered an amazing message.
Basically it’s the story of a young boy abandoned by his mother to be raised by his abusive father. Through all of his unfavorable circumstances, he still finds a connection with God and goes on to become a famous Christian singer with the most popular contemporary Christian song to date, “I Can Only Imagine”.
If you haven’t seen this movie, GO SEE THIS MOVIE!!! It’s that good.
Here’s the thing, though. Bring tissues. Lots of tissues. More tissues than you think you’ll need…and then some more. It’s a tear jerker indeed. A tear jerker in the very best way. Basically, I bought a cucumber last night for tonight’s dinner, but I ended up using half of it on my eyes this morning to calm down the puffiness of my tear tortured eyeballs. But it was worth every wasted slice of cucumber. Guess I need another cucumber though…

Besides saving my face from bulging eyelids, turns out cucumbers make the yummiest, healthiest, creamiest dip that can accompany ALL the things. This Creamy Cucumber Avocado Dill Dip is, dare I say, almost as satisfying as a long overdue date night.
I got the idea for a cucumber dressing from Bolthouse’s brand cucumber ranch dressing. I also love their classic ranch and their cilantro avocado, so I figured why not create a hybrid of all three?
This dressing is a mixture of tangy Greek yogurt, smooth avocado, and cool crisp cucumber. It’s all blended together with the perfect combination of spices and fresh herbs. Fresh dill is a must, but you can opt to pair it with either fresh or dried parsley leaves.
This creamy cucumber avocado dill dip is so versatile. I’ve used it with everything from a dressing on salad, a dip for veggies, and a sauce for my one pan lemon chicken (recipe coming next). I’ve even used it as a spread for sandwiches and a topping for breakfast hash. I’m telling you, this dip is just that addictive, you’ll want to pair it with EVERYTHING!
Oh, and did I mention just how easy this dip is to make??? I’m talking, throw everything into a blender and tap your fingers for about a minute. BAM! Done. Seriously, you couldn’t ask for an easier, healthier dip than this.
It also keeps in the fridge for up to two weeks. In fact, it tastes even better the next day as the flavors have time to meld and marry. Just make sure to keep the dip in an airtight container with plastic wrap touching the surface to keep the dip from losing it’s vibrant color. It won’t go brown or anything without this extra step, but the color won’t be quite as bright.
So bust out all the pastels this Easter, including this healthy Creamy Cucumber Avocado Dill Dip. It’s a condiment you can feel good about snacking all day long on. Oh yeah, and Happy Easter!!!

- Cucumber Dill Sauce
- Lemon Garlic Mayo
- 1 cucumber, peeled and roughly chopped (about 2 cups)
- 2-3 cloves garlic, minced
- ½-3/4 teaspoon salt
- ¼ teaspoon pepper
- 1½ tablespoons fresh, roughly chopped dill
- 1 teaspoon dried parsley
- ½ medium avocado
- 1 cup Greek yogurt
- 1 tablespoon minced onion
- 2 teaspoons lemon juice (about ½ lemon)
- Place all ingredients in a blender or food processor and blend until smooth. Season to taste with extra salt, pepper, and dill.
- Chill in fridge for at least 30 minutes before serving.
- Store leftovers in an airtight container (with plastic wrap touching the surface so no air touches the dip) in fridge for up to 2 weeks.
