ME BEFORE THE RECIPE…
Both my children LOVE attention. I mean, that’s kind of a no brainer. Every child loves attention, right??? But, it’s interesting how each child likes to receive attention in a specific way. My two children are as follows:
One child is all about the bells and whistles, the hoots and hollers, and the praise almighties. This particular child of mine wants the entire world to know every accomplishment, every milestone, and every good deed. She thrives off compliments and vocal praise. Her dream world would be a utopian land of endless hugs and kisses and congratulatory high fives. Her need for acknowledgement is immediate, otherwise doubts of “you don’t really care” quickly set in.
She’s intense. That’s the most accurate description of her personality. She’s a burning ball of energy, a firecracker waiting to explode at any given moment. She’s a radiating light that is nearly impossible to ignore. With her natural gift for commanding/demanding attention…this little star of mine is destined to shine, I have no doubt.
My other child is meek and humble. She leaves little love notes and waits patiently to be recognized. An accepting smile, an encouraging wink, or an enthusiastic thumbs up from afar is all she needs to press on in confidence.
This little lady has a nonchalant passive way of requesting attention; she’ll gradually scoot a little closer, talk a little louder, or quietly grab your hand and lead you in the direction of her masterpiece. Her love language is simply being there…being present. She doesn’t necessarily need all the laughs or giggles or tickles or snuggles. Just being there next to her is all she requires to feel loved and noticed.
Just as her sister will go far in life, this sweet child of mine has an unlimited potential for success as well. Not because she demands attention, but because she has a gift for making others feel important, and special, and valued. And those are the personalities that thrive; the ones that are as aware of others as they are of themselves.
Are both my children equally amazing??? YES they are! Different, but undeniably equal in worth. I’m blessed to have such varying personalities, each of which teaches me something slightly unique about human nature and basic needs. Together my children are molding me into a better person, expanding my capability of loving a little more every single day.
Just as it’s a challenge to adequately meet the varying emotional needs of my household, it’s almost just as testing to meet the needs of their disagreeing taste buds. But really, WHY???!
Why can’t everyone just taste good as good and bad as bad? Is that too much to ask for?! If I find something pleasing to the taste, shouldn’t everyone find it as equally yummy? Ahem, Ben and his aversion to all things pumpkin…he sure sucks all the fun out of fall baking.
I have Braelyn who loves all things carbs and sweets, Emry who loves all things…well…all things involving bacon, and Ben who loves anything he doesn’t have to make himself. He’s pretty easy to please. Again, besides the pumpkin.
But out of the two girls, one is always bound to complain about something I’m making. In fact, Braelyn had to write a half page apology note this morning before she was allowed to eat breakfast because she turned her nose up at the menu. Oh, and don’t worry. She ended up eating almost every last bite. Those breakfast burritos must have been terrible. Little stinker.

Anyway, you can imagine I’m beyond static to find any meal that satisfies both my children and, therefore, results in cheerful dinners rather than an over abundance of eyerolls and sickening sighs. And such is the case with this family friendly Gluten Free Beef Stroganoff that boasts as a quick and easy weeknight meal. Oh how I love you beef stroganoff. You’ve saved the day as well as my sanity.
Emry loves noodles. Check.
Braelyn loves sour cream. Check.
Ben loves steak. Check.
Looks like I’ve got my bases covered with this dish. My favorite part, besides the fabulous taste, of this gluten free beef stroganoff is how quickly it all comes together. I’m talking under 30 minutes. That’s almost unheard of. Now I know there are galleries of 30 minute meals out there, but how many of them are actually 30 minutes??? Maybe if you had Gordon Ramsey and his line of cooks working in your kitchen, you could pull it off that fast. But all by your lonesome??? Get real.
BUT, this gluten free beef stroganoff is legit 30 MINUTES and that’s it. I promise.
The main trick I learned for an extra tender beef stroganoff is to use either ribeye or flank steak left whole. Do NOT cut them into strips and then cook. All you do is cook your steak in your cast iron until medium, set aside to rest, slice against the grain right before serving, and stir it into the sauce to warm through. It’s that simple. You’re left with perfectly tender, juicy strips of steak swimming in your savory cream sauce.
And speaking of sauce, it comes together in minutes with a little sauteing of onions and mushrooms and then mixing in some beef stock and sour cream. Easy peasy.
You can even adjust the consistency of the sauce to your liking. If you want it creamier, add more sour cream. If it’s too thick, adjust it with a splash of pasta water or milk. You really can’t screw it up…or at least I’m extremely confident you have the basic skills needed to make this killer sauce.
Lastly, pick a gluten free noodle that your family enjoys. Typically stroganoffs are made with egg noodles, but gluten free egg noodles are hard to find. You can opt for fusilli, fettuccine, rotini, or spaghetti noodles if those are more readily available where you live.

- 2 lbs. ribeyes or flank steak, about 1" thick
- 2 tablespoons olive oil
- 4 tablespoons butter, separated
- 10 oz. sliced cremini mushrooms
- 1 small onion, sliced
- 2 cloves garlic, minced
- salt and pepper to taste
- 2 cups beef stock
- 3 tablespoons cornstarch
- 1 teaspoon prepared horseradish (optional but recommended)
- 1 tablespoon Worcestershire sauce
- ⅔ cup full fat sour cream
- ¼ cup fresh chopped parsley
- 12 oz. gluten free fettuccine, bow-tie, or egg style noodles
- Season ribeye steaks or flank steak generously with about 1 teaspoon salt and ½ teaspoon pepper. Set aside.
- Begin boiling a pot of salted water.
- Heat a large cast iron skillet to medium high. Add oil and heat until drop of water sizzles. Swirl around to coat pan. Add ribeye steaks or flank steak and cook for 3 to 4 minutes per side, adding 2 tablespoons of butter right before flipping. Cook to medium (redish pink in center). Remove from pan and set aside to rest.
- While steak is cooking, cut up onion and mushrooms. Once you remove steak, reduce heat to medium and add remaining 2 tablespoons butter. Once melted, add onions and mushrooms. Season generously with salt and pepper.
- At this point, begin cooking your noodles.
- Cook onion and mushrooms over medium heat for 5-6 minutes, stirring occasionally to avoid burning.
- In a small mixing bowl, whisk together beef stock, cornstarch, horseradish, and Worcestershire sauce. Pour into skillet and stir. Bring to a simmer and stir for 2-3 minutes until slightly thickened. Reduce heat to low and stir in sour cream.
- After steak has rested, slice into thin strips against the grain. Add strips into sauce and stir to coat.
- Once noodles have finished cooking, drain and add to sauce mixture. Stir to coat. Season sauce to taste with additional salt and pepper. If sauce is took thick, add a splash of milk, beef stock, or pasta water and stir. If sauce is too thin, add a little extra sour cream. Top with fresh parsley and serve immediately.
