Where has the time gone???!
No really, I’ve been searching for it all day and I just can’t seem to find it. I’ve looked under the bed, in between the couch cushions, under the pile of clothes in the laundry basket, and it just hasn’t turned up yet.
I guess missing time is just something I’m going to have to learn to live with. Just like missing socks, it never seems to turn up.
Which is why I love recipes for goodies like these Gluten Free Butterscotch Milk Chocolate Soft Batch Cookies that can be whipped up in no time and put an almost immediate smile on my children’s faces. No time wasted here!
These cookies have the texture of your typical soft batch cookie. Soft, tender, chewy, with a slight crisp on the outside first out of the oven. But remember, I always say to let gluten free cookies sit until almost cool when they come out of the oven. It ensures that they stay together. But, if you don’t mind scooping cookie up with your fingers, go ahead and eat them straight out of the furnace.
Don’t say I didn’t warn you!
I have to laugh whenever I hear the phrase “soft batch cookies” because the only thing I ever think of is the Keebler brand Soft Batch Chocolate Chip Cookies. I remember many college nights when my friends and I would make our way down to the dorm room vending machines, buy ourselves a pack of these, and nuke them in the microwave hoping for them to taste just like our moms’ homemade cookies.
Yeah, not even close. Sorry Keebler.
So unless you’re in the college dorms with absolutely no access to a handheld mixer and an oven, you haven no excuse to NOT make a batch of these cookies. Keebler may be easier, but these are tastier and TASTY always wins!
