ME BEFORE THE RECIPE…
I have issues. I can never do anything plain and simple. That’s probably why I avoid most projects. The idea of completing any type of project, and the effort it takes to make it perfect, strays me away from even starting.
Even seemingly simple projects like putting pictures into picture frames. Do you know it literally took me like 3 months to finally insert our family pictures into the empty frames I had sitting on our shelves upstairs??? And after cutting out all the pictures and arranging them just so, I realized the color of the photos was a little off.
After researching and realizing that I selected the wrong printing method at Costco, I had to reorder all new pictures. Guess where all those new pictures are sitting right now? NOT in their frames. Yep, they’ve been tucked away in a desk drawer for a solid 7-8 weeks or so. One day I’ll swap them out.
HERE COMES THE RECIPE…
One arena I don’t mind being elaborate in is with cooking and baking. I’ll take all the extra steps to ensure my food is fancy and flavorful. I could spend all day in the kitchen perfecting a recipe, indulging in my own little paradise.
However, I know this is not the case for most people. I’d venture to say the majority of folks don’t love wasting away in their kitchens. So YAY! Today I’m sharing a recipe over at Oh Sweet Basil for these fancy looking Gluten Free Chocolate Marshmallow Cookies. Secret is, they’re pretty simple. But nobody has to know that but you.
Let’s Talk GLUTEN FREE CHOCOLATE MARSHMALLOW COOKIES
These Gluten Free Chocolate Marshmallow Cookies are basically a gluten free chewy chocolate cookie topped with melted chocolate and toasted marshmallows. The cookies are made using a store bought gluten free flour mix so you don’t have to spend any time mixing your own flour blend. That’s always a plus.
The melted chocolate layer just involves a microwave and your preferred type of chocolate chips. I love dark chocolate or semi-sweet, but you could go milk chocolate all the way if you have a real sweet tooth.
Okay, and let’s just swoon over these toasted marshmallows for a second. I toasted the first batch with a kitchen torch because I have one and I felt fancy using it. But turns out, these actually toast more evenly under the broiler. Who would have thought the easier route would have yielded a better product???! Happy dance.
