School’s out for summer! Wahoo!!! Actually, I can’t decide if this mom brain of mine is excited or terrified for the months to come. I mean, it’s nice to avoid the hustle and bustle in the mornings, but is that downtime really worth the constant referee role I will be playing for the next 10 1/2 weeks??? We shall see…
I think I’m having another midlife crisis with summer looming over my head. I know, I know…this is like my fifth or sixth midlife crisis this year alone. Shall we recount?
Hmmm…let’s see…there was my month or so of determination to be a full time food blogger. Although that’s still a dream, I’m not sure I’m ready to be glued to my computer 24/7 and I’m still being haunted by all I need to learn about photography, videography, photo/video editing, SEO for the website, social media outreach, etc. Ugh. Soooo much to learn.
Oh, and then there were the weeks of debating whether I should return to school and pursue a new major. I dabbled with the idea of entering the field of nutrition and becoming a registered dietitian. I would love to work for a school district helping them plan fresh and balanced meals for the kids. This is still an interest, although I realize my passion for change in the school lunch room would be very much hindered by budgets and backlash. One day there will be progress, one day.
Then there was the moment I though I could write a book! What kind of book you ask??? Who knows. I just like to write. It could be a youth novel, a self-help book (in which I would need to reread and reread over and over again), a nutrition coaching book, or even a cookbook. I just want to write a book. Don’t mind me. I’ll be in the brainstorming phase for the next decade or so.
Oh, and then there was yesterday when I told Ben that I should just work at the school. I volunteer in the kids’ classrooms enough that I might as well be a hired assistant. Then I realized I only like my own kids, so that probably wouldn’t be the job for me. Okay, I’m kidding. I like kids. I just don’t have quite the same amount of patience for others’ kiddos like I do my own. Haha! Please tell me I’m not the only one.
And here’s the conclusion that I came up with: I still have no idea what I want to do with my life. So I’ll just continue to cook and bake and chauffeur and volunteer and clean and blog and cook and bake some more until I have some grand epiphany concerning my future.

These gluten free lemon bars turned out better than I could have ever imagined. The crust is thick, yet flaky. The custard has a spot on balance between sweet and tart, with an explosion of fresh lemon taste. The top of the custard forms a thin, crispy layer that holds up against a dusting of powdered sugar.
You guys, these gluten free lemon bars are insane. Like INSANE!!! They are soooo yummy I can hardly handle it. Which is probably why I only make them a few times a year.
Oh, and these are the perfect treats to freeze. Just wait for them to completely cool, then layer them with sheets of parchment paper in an airtight container. Fabulous.
