Seriously, you think I’m kidding do you? I’m not. I’m sitting here writing this post in my underpants with little beads of sweat dripping from my upper lip. Just being real, yo!
So if that doesn’t give you a nice visual right off the bat, how about imagining you are laying on the beach listening to the sound of the ocean waves rolling in, sand in your toes, ukulele playing in the distance, sun beating down on your skin (in a relaxing, not a “I’m so hot I think I’m gonna DIE” kind of way), and licking on an ice cold, freshly pureed mango popsicle with a splash of lime and a whole lot of cheesecake flavor.
PHEW!
Now that sounds nice.
Unfortunately the popsicles are gone and I am left here to wallow in my own sweat, just dreaming about the days that these popsicles were living in my freezer. WAHHHH!
It’s seriously so hot and humid here that I STEAL my kids’ fans at night. I’m ashamed to admit it. How horrible is that?!
In my defense, I make sure that they are comfortable enough to fall asleep at night with a ceiling fan and two rotating fans. But then when it’s my bedtime, you can bet your booty I’m gonna go and swipe myself one of those rotating fans from their room and stick it right in front of my melting body. Mama’s gotta be happy around here or else AIN’T NOBODY HAPPY!
In all reality, I’m being a little over dramatic about all of this. Really I just tough it out with the heat and all. Ben’s the real baby around here. He’s the one that steals the fans at night. He’ll be appreciative to know that I ratted him out on here.
So back to the bliss of these Gluten Free Mango Lime Cheesecake Popsicles.
They. Are. DIVINE.
I love them!
With bag after bag of fresh mangoes coming from our friends and neighbors, we just couldn’t keep up with eating them fresh…though we tried and TRIED! They really are sooooo good.
Instead of throwing them out, I cubed up a half dozen of them and stuck them in the freezer for future use. Not sure what for, but I knew something good would come of it.
Fast forwarding to one of those days that I felt like I was living in a volcano rather than on a volcano, I figured, “Why not popsicles???!”
Which, by the way, the word popsicle has some major magic to it. There’s something about that word that turns any kid into a raving maniac. You mention the word and they come feet running, tongues flapping, drool dripping, and fingers grabbing. No joke.
Not only do these mango popsicles have fresh pureed mangoes in them, but they also have a splash of lime juice and cream cheese. Yes, CREAM CHEESE!
The trick to getting that cheesecake flavor is to make sure the cream cheese is softened, the mango is either fresh at room temperature or thawed, and the yogurt isn’t too cold. That way you can puree it all together and really get that cream cheese smooth and mixed evenly throughout the popsicle mixture.
Oh, and did I mention these Mango Lime Cheesecake Popsicles are not only gluten free but SUGAR FREE as well?! Yep. Beat that.
They are sweetened with only honey and the natural sugar from the mangoes. Add more or less honey depending on the sweetness of the mangoes that you are using. Hawaiian mangoes are super sweet, so I didn’t end up using too much honey in my recipe.
So there you go, whip up these chilly treats before this blasted summer ends. Don’t worry if you don’t have bags of fresh mangoes like me; you can find frozen mangoes in most grocery stores. Those should work just fine for whenever you’re craving a little mango cheesecake action. Now get on it!
- 3 cups cubed fresh mango (or frozen mango thawed)
- 3 oz. cream cheese, softened
- 1 tablespoon lime juice
- 1½ tablespoons honey*
- 1 cup plain yogurt, room temperature
- Add softened cream cheese to blender and blend until smooth, scraping sides as needed.
- Add remaining ingredients and blend until smooth.
- Pour mixture into popsicle molds and freeze for 6-8 hours or overnight.
- Run warm water over outsides of molds to loosen popsicles before eating.

Hahaha, it is the perfect chilly fall day here! But it was pretty sunny and hot this last weekend, and I can go for a frozen treat anytime as long as I have a nice thick blanket… Lol. Love the Mango Lime combo!
