Soft and chewy Gluten Free Oatmeal Raisin Cookie Bars with a mixture of old fashioned rolled oats, plump raisins, and chopped pecans.
So please excuse a few of my posts over the next couple of weeks. They are going to redirect you to other websites where I have guest posted over the past few months. You see, I get so excited about making new things and posting them on my site, that I forget to share links to recipes that I have posted for other sites as well.
And as much as this is basically a free online cookbook to all of my lovely dedicated followers, it is moreso a personal recipe archive for myself and my children for future reference. So, I like to have ALL my recipes posted in one place, even if it means redirecting you to another site.
So there. That is my apology. I know that some readers get annoyed when the recipe isn’t right there on the same page, but to them I say, “It’s free! Get over it!”
Hahaha! Sorry to anyone I offended…but not really.
So first up in this guest post list of recipes are these glorious and EASY Gluten Free Oatmeal Raisin Cookie Bars.
Who loves oatmeal raisin cookies??? Me, me, me! And, well, since I do…I get to make them. And thankfully my kids and hubby discovered they like oatmeal cookies just as much as I do.
Usually, if my family has the choice, they would have me make something that involves chocolate for dessert. Brownies, cookies, ice cream…you name it. But occasionally I will put my foot down and make exactly what my deserving taste buds are screaming for.
And just so happens, the day I made these oatmeal cookie bars, my taste buds where chanting, “Oatmeal Raisin!”
It also just so happens that my brain was chanting, “No more work! I’m tired!!!”
So my mouth and my mind made a compromise. That compromise was throwing all the cookie batter into a pan and shoving it in the oven. No individual cookie scooping. No sitting in the kitchen waiting for each batch of cookies to bake. Instead it was just a quick mix, bake, and cool. EASY PEASY!
These oatmeal raisin cookie bars are a cross between a blonde brownie and an old fashioned oatmeal cookie. They are soft with a slightly gooey center, full of plump juicy raisins, and sweetened with loads of brown sugar. Uh, yes people, these are NOT healthy. They’re just good.
Although, they do have oats…
I could seriously eat an entire pan of these if it didn’t mean unbuttoning my pants and sitting on the couch for days. But, that does sound nice. The sitting on the couch for days part. I wonder at what point in my life I will ever be able to do that. Hmmm…
