Seriously, if your hands are NOT in the air then you are one crazy camper.
CAMPING!
Uh, these would be perfect for a camping trip! Sitting around the fire eating handfuls of Chex Mix. Yeah, I could definitely handle that. Give me Chex Mix and access to a shower and camping may not be so bad.
I will say that one of my most favorite vacations ever was camping on the beach in San Diego. I crashed a friend’s annual family beach trip while Ben was off training for a new job across the country.
There is nothing like packing up yourself and your toddler for a week long adventure on the coast of California when you don’t even own a single sleeping bag. I’m telling you, I’m NOT a camper.
But that trip was AMAZING between listening to the sound of the waves in the ocean while falling asleep at night (after Braelyn’s routine screaming episode of not wanting to go to bed) and the freedom to sit around and do NOTHING buy enjoy. Yeah…I would definitely do that again.
Aaaannnnnd back to Chex Mix. Oh how I love Chex. Well, I love it because Braelyn loves it. On those busy mornings where I am just trying to get her out the door in time, it’s nice to know that she will scarf down a bowl of cereal without complaint.
Now here is where I cause a little controversy. And if I was a big-time blogger Chex would kill me for saying this, but fact of the matter is…I’m not. Therefore I can say whatever I want, right???
I will only buy Wheat Chex (for me), Corn Chex, and Rice Chex. I don’t care what brand cereal you are, I don’t believe in sugar for breakfast. Braelyn would love to eat all the other fun flavors that Chex has to offer (Chocolate, Vanilla, Cinnamon, etc.), but I just can’t justify feeding it to my child for breakfast.
Now on the other hand, a sugary handful of crispy goodness for DESSERT or a little treat in the middle of the day…that I can do!
So when Braelyn was asking for a treat the other day, and I wasn’t in the mood to make a batch of cookies, I pulled out our tried and true boxes of Chex and whipped up these Gluten Free Peppermint Chex Mix Muddy Buddies in a matter of minutes.
MINUTES!
This recipe is very similar to your mainstream Muddy Buddy recipe with the chocolate, peanut butter, and powdered sugar. But instead of adding peanut butter to the melted chocolate chips, I put in a few drops of DoTERRA peppermint essential oil that a friend of mine gave me to sample. (You can follow her on Instgram if you’re interested in her products or health advice)
Now you could just as easily add peppermint extract, but I’ve been enjoying learning how to cook and bake with some of the oils that my friend gave me, like with these muffins. They have some intense flavors!
So each little individual piece of Chex is covered in melted peppermint dark chocolate and then tossed in a coating of powdered sugar. Pretty much it’s like eating handfuls of Thin Mints, Chex Mix style. That’s what the flavors remind me of.
I brought a batch of this Chex Mix to my Sunday School class of teenage girls and one of them full on LICKED her snack bag clean…after she made sure to lick each and every one of her fingers. I think it’s safe to say that she enjoyed my little treat.
Oh yeah, and let me emphasize again that this dessert literally took only minutes. Minutes, as in FIVE. I would bet money on the fact that each and every one of us can set aside at least 5 minutes in our busy days to indulge in a treat. But if not…well, you need a vacation then!
Although, a treat this good and this easy may not be the best idea anyway. Those two factors = ADDICTIVE. Be careful!!!
What are your favorite Chex Mix recipes?
- 4 cups Corn Chex*
- 4 cups Rice Chex*
- 1 bag of Nestle Dark Chocolate Morsels (or 2 cups dark chocolate chips)
- 4-6 drops peppermint oil (or extract), depending on taste
- 1 cup powdered sugar
- Measure out cereal and put in a large bowl. Set aside.
- In a microwave safe container, heat chocolate at 50% power for one minute. Stir until smooth, adding 15 second increments as needed to reach smooth consistency. Add 4-6 drops of peppermint oil, or extract, to reach desired peppermint flavor.
- Pour chocolate over cereal and stir until cereal is completely coated in chocolate. Scoop cereal into gallon sized Ziploc bag. Pour powdered sugar on top.
- Leaving air in bag, seal the zipper tightly. Shake bag until all cereal is coated in sugar. Pour out onto wax paper or baking pan to let cool completely.
- Store in airtight containers for up to a week.
