Boy is summer EXHAUSTING!
I’m telling you, I could fall asleep standing up, riding in the car, typing at the computer, or even swimming in the pool if given even a minute or two of downtime.
Downtime???? Bahahaha! Like that word even exists in the vocabulary database of my 3 and 6 year olds. Yep, downtime just ain’t an option for the next 8 weeks of summer, so I better just plain old WAKE UP.
Between traveling from Hawaii to Phoenix and staying with multiple friends for 6 days, then hopping on a plane to Utah to spend 5 1/2 weeks with family, and then driving out to Denver for an extended weekend with my brothers before flying back to Hawaii…I’m just gearing up for being continually T-I-R-E-D.
But, let me tell you, summer is worth every yawn, every dozing head nod, every sleep deprived temper tantrum, and every expensive bottle of Visine trying to cure those nagging red eyes. All these things are just obvious signs of the hours of adventures and entertainment lurking around on a daily basis. Wouldn’t trade it for the world.
Really the best part of summer is just being able to spend as much time with friends and family as you can…as long as you are coherent enough to carry on any type of decent conversation among all the exhaustion and delirium.
Regardless, one of my favorite ways to spend time with family is with a potluck type gathering, whether that be a barbecue, a swim party, a picnic outdoors, or a very brave family member offering up their home to host their own clan of crazies.
And here’s the thing, the next time you get an invite to one of these events, you should definitely come with an inviting appetizer in hand. In fact, you should just have a constant staple of this Pineapple Lime Cilantro Salsa in your fridge so you can whip it out at a moments notice to become the culinary life of any and all of your summer parties.
With all the amazing pineapple that grows in Hawaii, I can’t believe it’s taken me nearly a year to post a recipe for pineapple salsa. That’s just blasphemy right there. But, I assure you with all the freshness and flavor bursting from a bowl of this salsa, you will soon forgive me.
The sweet tanginess of the pineapple pairs so nicely with the subtle to intense heat (depending on your taste) of the jalapenos and the savory flavors of the onion, garlic, tomatoes, and cumin. Plus I also love all the variety of textures in this dip, my favorite being the juicy crunch of the fresh onions.
This salsa is quite easy to toss together once all of the chopping is done, and it keeps in the fridge for nearly a week. In fact, it gets better after a day or two of sitting and marinating in the juices. Just give it a quick toss and a slight drain before serving and it’s as good as new to serve again.
You can serve this salsa as an appetizer alone with tortilla chips, or use it as a fixing for tacos, nachos, tostadas, burritos, omelets, taquitos, enchiladas, you name it. I pretty much found things to eat this salsa with for a week straight, that’s how good it was. I also seemed to go through more packs of gum than usual that week…but hey, it was worth it.
So gear up, wake up, and start planning some summer parties! It’s never too late for a fiesta with friends…unless it’s midnight. Then it’s just time for bed. Darn tootin’!
How is your summer treating you thus far?
- 1 cup diced fresh pineapple
- ¾ cup diced tomatoes
- ½ cup diced onion
- 2 tablespoons chopped cilantro
- 1 tablespoon diced (seeded for mild) jalapeno
- juice of 1 lime
- ½ teaspoon salt
- ¼ teaspoon pepper
- ¼ teaspoon cumin
- ¼ teaspoon garlic powder
- Prepare by dicing pineapple, tomatoes, onion, and jalapeno. Chop cilantro.
- Add all ingredients into small mixing bowl. Cover tightly and chill in fridge for 30 minutes to an hour. Stir salsa and then drain all but ¼ of the juices.
- Serve chilled.
